At ITW’s Traulsen company, blast chiller technology—cooling food quickly to avoid bacterial growth—just keeps getting better. Customers asked for a blast chiller that was less complicated to use, so the engineers set to work designing a more manageable, user-friendly chiller. The resulting new blast chiller with Epicon visual interface is so easy to use, that food safety is improved over standard refrigeration. Large quantities can be prepared with consistent, repeatable results — and with the touch screen control, it’s right at the tip of a finger.
Whether a chef is setting the menu or an operator is recalling instructions, using the blast chiller is simple. There are two modes to select from on the touch screen: auto and manual, and even the manual mode offers a series of guided steps. And with the USB port, even better chill data and menu items can be exported and imported respectively for a paperless documentation system. State-of-the art cyclonic air-flow technology ensures the critical chilling time is as short as possible. Hot food is quickly chilled and moved through the HACCP temperature Danger Zone. The on-board printer helps with documentation requirements and an optional label printer lets users say good-bye to handwritten, hard-to-read labels and operator error. Mission accomplished.
